Beets & Beet Greens

While the nutrients in the beet root (what we refer to as the "beet") can help to protect us from cancer, fight inflammation, lower blood pressure, and increase stamina, beet greens (the tops of the beets), may have even more health benefits and are well worth adding to the plate. Loaded with nutrients that can help support brain and bone health as well as strengthen the immune system, beet greens are delicious sautéed or used in salad. Get the most for your money and your health by using the entire beet. We love the beets from Balsam Farm in Amagansett.


Summer Citrus Sautée Summer Citrus Sautée

(serves 4-6)

Ingredients
1 bunch beet stems, cleaned and chopped
1 shallot, diced
1 bunch beet leaves, washed and chopped/torn into pieces
1 garlic clove, minced
*1 Tablespoon extra virgin olive oil
1 1/2 Tablespoons champagne vinegar
Zest and juice of 1 orange
salt and pepper to taste

Method
Place oil in a medium skillet, over medium high heat. Add stems and shallot and sauté for 4 to 5 minutes (or water sauté). Add beet leaves and continue to sauté for 3 minutes. Add garlic, champagne vinegar and orange juice and simmer until all juice has evaporated, 2 to 3 minutes. Season with salt and pepper to taste before topping with orange zest and serving.Place oil in a medium skillet, over medium high heat. Baked Beet Green Chips Baked Beet Green Chips

Ingredients
1 bunch of beets greens
sea salt, to taste
olive oil
black pepper, to taste

Method
Pre-heat oven to 350 degrees. Wash beet greens and dry them with paper towels. Snip the thick stems from the leaves with a scissor and discard them. Lay the leaves on a baking sheet lined with parchment paper and lightly coat the greens with oil. Sprinkle salt and pepper on both sides of the leaves. Bake for approx 10 minutes, flip the greens over, and bake for another 10 minutes or until the beet greens are crisp.
