With 1 Tablespoon of oil sauté the mushrooms in a ledge pan or Dutch oven until soft, remove and drain over a fine sieve and reserve liquid.

Add reserved mushroom cooking liquid, lemon zest, juice and fresh herbs. Season to taste with salt and pepper. Fold in mushrooms, fluff and serve.
