Prepare a mold by lining a small bowl or small loaf pan with plastic wrap. Sprinkle the inside of the mold with toasted sesame seeds.

Melt the margarine in a large skillet. Vegetable broth also works great in place of margarine. Sauté the mushrooms, onion, and garlic until most of the liquid has evaporated and the onion is soft. Remove from heat.

In a blender or food processor, chop the nuts until they are finely and evenly chopped (pulse the machine and scrape the sides often to avoid turning the nuts into nut butter). Set aside 2 Tablespoons of nuts. Continue pulsing the machine and drizzle in the oil (or broth) until the mixture is well blended.

Add the mushroom mixture and seasonings, and blend thoroughly. Stir in the remaining chopped nuts for a little texture.

Fill the prepared mold and chill for about one hour. Unmold onto serving plate. Sprinkle with more toasted sesame seeds. Serve with crackers.

  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3/4 Cup slivered or sliced almonds, toasted
