  • 2 Cups rolled oats
  • 1/2 Cup almond or other nondairy milk
  • 1 Cup pumpkin puree (can also use sweet potato)
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 TBSP ground flax
  • 1 TBSP apple cider vinegar
  • 1 TBSP maple syrup or agave
  • 1-1/2 TBSPS baking powder
  • 1/2 tsp baking soda
  • optional additions: chocolate chips or pecans
