Carrot Ginger Dressing
This cool and refreshing dressing can also be served as a dip with crisp veggies!

Ingredients
- 1 lb. carrots (approximately 4-5, roughly chopped)
- 1/4-1/2 Cup ginger (depending on your taste), roughly chopped or grated
- 2 TBSPS soy sauce
- 1/4 Cup apple cider vinegar
- 1/4 Cup raw tahini
- 1/2 Cup water as needed
Step 1
Mix carrots, ginger and soy sauce in a food processor.
Step 2
In medium sized bowl, whisk tahini and vinegar together until the mixture thickens into a paste (about 30 seconds). Gradually add water to thin the paste into a thick but pourable consistency.
Step 3
Add tahini-vinegar mixture to food processor with other ingredients and process until smooth or desired consistency.
