Carrot Ginger Dressing

This cool and refreshing dressing can also be served as a dip with crisp veggies!

  • 1 lb. carrots (approximately 4-5, roughly chopped)
  • 1/4-1/2 Cup ginger (depending on your taste), roughly chopped or grated
  • 2 TBSPS soy sauce
  • 1/4 Cup apple cider vinegar
  • 1/4 Cup raw tahini
  • 1/2 Cup water as needed

Mix carrots, ginger and soy sauce in a food processor.

In medium sized bowl, whisk tahini and vinegar together until the mixture thickens into a paste (about 30 seconds). Gradually add water to thin the paste into a thick but pourable consistency.

Add tahini-vinegar mixture to food processor with other ingredients and process until smooth or desired consistency.
